If You Can't Take the Heat...
Well, Andrea Villarubia can take the heat and Sayultia summer days often find her in her kitchen, making such delectables as mango cobbler, using fresh cut mangoes and based on Paula Dean's peach cobbler recipe from foodnetwork.com. Andrea skipped the added sugar in the fruit filling and declared the cobbler "super yum."
Her favorite no-heat cooking summer meal so far has been a ceviche that she made with shrimp, scallops, mango and grapefruit. Andrea had wanted to make a ceviche for a potluck and another Sayulita friend had made them a chunky, fish ceviche with mango at a dinner party. Thinking that mango would be yummy with the sweeter shellfish, Villarubia inquired as to what was available at the fish market and came home with both scallops and shrimp. She already had the grapefruit at home and thought that the tart citrus would be a great complement. When I spoke with Andrea, she lamented that she wished she had time to make the ceviche this week!
Andrea's Summer Ceviche
½ kilo peeled, cleaned, fresh shrimp
½ kilo scallops (if frozen, thaw in cool, flitered water)
1 ½ - 2 cups freshly squeezed lime juice
½ cup pink grapefruit juice
½ of a thinly sliced red onion
2 mangoes, chopped into ½-inch cubes
½ cup freshly chopped cilantro
Salt to taste
This ceviche is best a little rare, which keeps the shellfish tender and sweet. Mix everything together in a bowl and let sit for about a half-an-hour, before serving with avocado, tostados and your favorite salsa picante. (Note: Marinating fish in fresh lime juice "cooks" the fish, much in the same way that heat does.)
If you still have mangoes to use up, chop them finely and mix in with your next batch of guacamole - sweet and delicious.
Andrea's Summer Loves: "As for other summer food faves, we had an amazing grilled lobster dinner recently, with fresh langostino (also from the fish market) and we've been eating lots of salads, fresh fruit and smoothies. The frutería by the bridge, across from Tacos Cheos, has great baby spinach, fresh, large-leaf basil, a small selection of organic foods and great prices on produce."
Si No Puedes Aguantar El Calor....
Bueno, Andrea Villarrubia puede aguantar el calor y los días de verano en Sayulita son ideales para estar en su cocina preparando delicias como postre de mango, utilizando mangos rebanados frescos. El Ceviche de Verano Por Andrea:
½ kilo de camarones pelados y lavados
½ kilo de callos (si congelados, déjalos descongelar en agua filtrada)
11/2-2 tazas de jugo de limón
½ taza de jugo de toronja rosada
½ cebolla morada picada
2 mangos picados en cubos de ½ pulgada
½ cilantro picado
Sal al gusto
Este ceviche es mejor un poco crudo, lo cual ayuda que los mariscos se mantengan tiernos y dulces. Mezcla todo junto en un recipiente y dejar reposar por media hora antes de servir con aguacate, tostados y tu salsa favorita. (Nota: Marinar el pescado en jugo de limón "cocina" el pescado en la misma forma que el calor lo hace)
Si te sobran mangos, pícalos y mézclalos con guacamoles - dulce y delicioso.
Encantos de verano por Andrea: Otros platillos favoritos de verano incluyen langosta asada con langostinos (de la pescadería también) y hemos estado comiendo muchas ensaladas, frutas y smoothies.
