Galletas Marias
One of the best things about settling in as a part-time resident in Sayulita and joining the Sayulero staff has been the friendships that I've made. Sayulita attracts those creative, smart, fun, warm, and welcoming and one of the very best among them is Sayulita-born Yésica Doreli Ramos Gómez. Beautiful and charming Yésica attended law school, but now is the proud owner of Sayulita favorite, El Espresso Cafe, near the town plaza. Yésica is also proud of her town, her large family and all of their traditions, and I have felt quite honored to get to know her a little and call her a friend. Recently Yésica shared one of her favorite desserts, Postre de Limón, made with the cookies found in every tiendita, galletas Marías. Yesica relayed that this was her favorite dessert growing up and is still a summer favorite of children. I told Yésica that I have adopted the cookies as a favorite as they have my name, which is very uncommon in the northern U.S., where I'm from. It turns out that galletas Marías even have their own Facebook page.
Postre de Limón
Makes 10 servings
1 can of condensed milk (approx. 1 cup)
1 can of media crema, or a small carton of heavy cream (approx. 1 cup)
Juice of 15 key limes
4 packages of galletas Marías
PLUS 15 single cookies from a 5th package
1/4 spoon of the key lime zest
Maraschino cherries for garnish
In a blender, mix the condensed milk, the 15 cookies, the heavy cream and the juice. Stir in the zest with a spoon. In an 8-inch square, glass baking pan, such as for brownies, set a layer of the galletas Marías and cover with a layer of the mix. Do the same until you run out of the galletas Marías and refrigerate until the mix thickens and sets. Serve cold with a couple of cherries on each serving.

1 lata de leche condensada (aprox. 1 taza)
1 lata de media crema (aprox. 1 taza)
Jugo de 15 limones ácidos
4 paquetes de galletas Marías y 15 galletas de un quinto paquete
1/4 cucharadita de ralladura de limón
Cerezas maraschino para decorar
En una licuadora, mezcla la leche condensada, la media crema y el jugo. Cuando este listo, agrega la ralladura del limón manualmente con una cuchara. En una charola de vidrio para hornear, 8 pulgadas, como para brownies, pon una capa de galletas Marías y cubre con la mezcla. Haz lo mismo, hasta que se terminen las galletas Marías y pon en el refrigerador hasta que la mezcla se ponga espesa. Sírvelo frío con un par de cerezas en cada porción.
